Wiatrek’s Meat Market, a family-owned, boutique meat market and processing facility, is coming soon to US 281 in North San Antonio.

Combining an old-school butcher service with modern convenience, the new 10,000-square-foot facility will offer higher-end cuts of meat, produce, sauces, seasonings, ready-to-cook meals and beer and wine in its retail market. The new location will also have a dedicated wild game and deer processing area in the back, which uses single-batch, old-school processing techniques, so hunters get back meat from their own animals.

Owned by former dairy farmers, the Ray family, the new site will be managed by Carter Ray, who emphasized the brand’s hands-on nature. He said the store will provide customers with a personalized experience, using a traditional butcher and high-quality ingredients in everything they offer.

“At the heart of it, nothing has changed. We are and always will be a family business, ownership is here every day, working alongside our team, making sure that everything we do reflects the same standards and values and traditions we were built on,” Carter Ray said.

“This building we’re starting today, we just don’t see it as a project. We see it as something that will stand for generations, a place where families will shop, where traditions will continue and where our name will carry on long after us,” Carter Ray said.

Currently, Wiatrek’s Meat Market has its flagship store in Poth, Texas and a North San Antonio location at Blanco Road and West Ave.
