On this week’s episode of ‘Bite of West Texas’, host Heather Easley stopped by the longtime local favorite to learn what’s kept customers coming back for more than three decades.
Owner Rick Daffron shares the story behind the restaurant’s beginnings, which date back to 1992. The first location opened on Buffalo Gap Road with just $50,000 and a leap of faith. Since then, the business expanded to multiple locations across the area before settling into its current home, where it has remained a staple for more than 20 years.
What sets Rick and Carolyn’s apart isn’t just its history – it’s the commitment to quality and consistency. From hand-breaded steak fingers to house-made onion rings and freshly cut fries, nearly everything on the menu is made from scratch daily. Their popular bacon cheeseburger continues to be a top seller.

Daffron says the secret to longevity is simple: treat customers right, hire good people, and serve food you’d be proud to eat yourself. That philosophy has helped build a strong connection with the community, where familiar faces – and even first-time guests – are welcomed like family.
Another unique touch? Every meal comes with free ice cream, a tradition that started as a treat for kids and quickly became a customer favorite.
