A Boerne taco truck is quickly gaining popularity in the Texas Hill Country, where former Creek Restaurant executive chef Josue Padilla is blending fine-dining artistry with street food at his new concept, Taco ‘Bout Us.

Less than weeks after Creek Restaurant in Boerne closed in March 2026, Padilla got to working creating the new taco food truck, which is inspired by Mexico City cuisine. 

The taco spot is located at 1491 S Main St, Boerne, TX 78006, next to his business partner’s recently opened speakeasy, Twelve to Twelve. The truck’s menu is intentionally small for now but carefully curated. 

“It’s not your typical taco,” Padilla tells MySA. “You’re gonna leave here with a great experience.”

The menu features standout tacos like a bone marrow and sirloin al carbón, a smoky option topped with lime, cilantro and onion, alongside the flavorful Diezmillo taco with chuck roll, salsa tatemada (a fire-roasted salsa) and avocado.

Padilla says presentation is a big part of the experience.

“To me, you know, food is art,” he said. “You get hungry for what you see. As soon as customers take a look at the taco presentation, the first thing they say is wow. Once they try the taco, they’re like, ‘I’m coming back.'” 

Sides include charro beans, nopales, creamy poblano soup and your choice of four signature salsas. The real star of the show is a friend we’re all familiar with — a soft, warm corn tortilla. 

I ordered the rib-eye taco, a thin-cut steak layered with crispy cheese costra, xnipec salsa and cilantro. The griddled cheese adds a crunch, while the rib-eye is filling and balanced by the pickled onions.

Padilla said he and his team are excited about building buzz around the taco truck. 

“It has always been my dream to, you know, have my own place,” he said.

Taco ‘Bout Us is open from 11 a.m. to 11 p.m. Tuesday through Saturday.
