What if your next go-to burrito bowl spot felt less like a chain — and more like San Antonio on a plate?
According to CultureMap San Antonio, El Mercado is aiming to strike that balance when it opens in May on the city’s Far West Side, blending the familiar build-your-own format popularized by spots like Chipotle with flavors rooted in Mexican tradition and shaped by local cravings.
El Mercado will open at the Portico at Shaenfield Ranch development, 7807 W. Loop 1604 N. It will operate daily from 11 a.m. to 9 p.m., joining a growing lineup of eateries at the development.
Founders say the concept was built with San Antonio in mind, offering customizable bowls and burritos alongside classic dishes and house-made salsas designed to feel both authentic and approachable.
“El Mercado was born from our love for our country and its flavors, but it’s San Antonio that truly shaped the concept,” co-founder Rodrigo Orraca said in a release.
Customers can build their own bowls or choose preset options like carnitas or birria plates, served with sides such as charro beans, rice and house-made salsas. The menu also includes appetizers like loaded queso and doraditos, plus desserts such as pastel de elote and Mexican chocolate cake.
Drinks will feature aguas frescas, cantaritos and frozen margaritas — a nod to San Antonio favorites.
The restaurant is planned as a proof-of-concept, with founders hoping to expand into a larger chain while staying rooted in Mexican and local flavors.
