The 2,200-square-foot lounge will officially open on Aug. 16
Assembly Icehouse built its reputation in Plano as a gathering place for families, sports fans and live entertainment. Now, less than a year after opening, the Assembly Park destination is adding something specifically for the grown-ups.
The adults-only lounge first announced in June officially opens Aug. 14 at 5 p.m., transforming the former Tacoro Tacos & Tequila space into a 2,200-square-foot cocktail lounge exclusively for guests 21 and older.
The new space gives Assembly Icehouse a different kind of nightlife offering without changing the broader concept next door: a more intimate setting built around cocktails, music and conversation.
A Different Side Of Assembly Icehouse
When Assembly Icehouse opened at Assembly Park in November 2025, the concept was positioned as a family-friendly destination for food, sports, live entertainment and community gatherings.
The new lounge creates a deliberate contrast. Rich finishes, lounge seating and a pool table replace the larger communal atmosphere next door, while the beverage program centers on handcrafted cocktails and premium spirits.
“The vision was to create a space where guests can slow down, enjoy incredible cocktails and great music, and experience hospitality in a more elevated way,” JR Muñoz said in an official statement. “Assembly Icehouse has become a gathering place for the community, and this lounge gives us the opportunity to offer something completely different, an adults-only destination that feels sophisticated without being pretentious.”
The cocktail menu includes the Midnight Bloom, made with gin, honey lavender syrup and St-Germain; the Crowned Revolver with Crown Royal XO and Pedro Ximénez sherry; and the Piña Enovada, featuring pineapple-serrano infused Casamigos. A rotating Dealer’s Choice will also give the bar team room to create cocktails beyond the regular menu.
Before You Go
The lounge opens Friday, Aug. 14 at 5 p.m., with DJ Danny 1 performing through midnight.
After opening weekend, the 21+ space will operate Fridays from 5 p.m. to midnight and Saturdays and Sundays from 11 a.m. to midnight, positioning it for everything from weekend daytime drinks to date nights and late-night gatherings.
The lounge is located adjacent to the Assembly Icehouse at Assembly Park in Plano.
With the addition, Assembly Icehouse is effectively serving two audiences within the same destination: the community-oriented environment that has defined the concept since opening and a separate space designed specifically for adults looking for cocktails and nightlife.
