Sometimes you stumble upon a place that satisfies your cravings and your nerdy childhood nostalgia. That was my experience this week when I tried what very well might be the best dino ribs in the Alamo City.
It’s been one year since Bussin Q BBQ traded in its food truck life for a brick-and-mortar in downtown San Antonio. I ended up there on a random Tuesday and tried my luck at the $65 dinoritto, a foot-long burrito stuffed with mac and cheese, queso, barbecue sauce, waffle fries, a cheddar cheese crust and a whole Texas barbecue beef rib. I’m here to tell you, it was the best dino rib I’ve eaten to date.
Dino ribs are a popular item across the Texas barbecue world. However, they’re more often a social media gimmick, a means of taking a massive bite of meat on the biggest bone imaginable for a video shared to the masses. Usually, the dino ribs are full of fat and get less and less enjoyable the further along the meal goes. Turns out, stuffing it inside a cheesy burrito is the best way to go.
The dinoritto is massive, and these words don’t do it justice. It’s almost impossible to hold up, both from the size and the heat, but once you take a bite, it’s all worth it. The mac and cheese, along with the queso, almost merges with the tender beef to create one enormous, juicy, savory bite. It’s basically the ultimate form of barbecue mac and cheese, if you also threw in French fries and a foot-long tortilla.
At $65, it is one of the more expensive things you’ll find on any menu, but take another look. If you’re eating alone, you can turn this one meal into lunch and dinner. I actually made it stretch for two days. Or, if you’re eating in a group, this one mega burrito is enough to feed a table of four.
If you’re wanting a more affordable option, you can opt for the $25 brisket mac and cheese or the $25 brisket mac burrito. If the brisket is as good as the dino rib, you’re guaranteed to enjoy cheesy, beefy bites with every serving.
Lastly, if you have dinosaur lovers in your life, this is the place for them. A T-Rex skull welcomes you at the entrance, and the table numbers are attached to toy dinosaurs. I opted for the stegosaurus. Consider them a preview before all the hot food awaiting you.
