Two popular comfort food chains: an Austin-born ramen spot and a Colorado-based breakfast diner are building new million-dollar locations in Central Texas next year. Ramen Tatsu-Ya and Snooze A.M. Eatery have officially set plans for new restaurants in Pflugerville, a city north of Austin.
Both chains recently submitted state filings for construction in two separate buildings at 18725 FM 685, a new retail development set for Pflugerville. The locations mark the first Pflugerville restaurants for Ramen Tatsu-Ya and Snooze, as the pair continue to grow in the Lone Star State.
Ramen Tatsu-Ya CEO Todd Coerver confirmed to MySA that the company is aiming to open the Pflugerville location in summer 2027. The Austin-based chain that first opened in 2012 is currently preparing to open its third location in Houston and ninth overall in Texas.
“As we continue to grow the Ramen Tatsu-Ya brand, we are excited to open our third Houston location, in Bellaire, next week,” Coerver told MySA through email. “Pflugerville is scheduled to open summer 2027.”
A Texas Department of Licensing and Regulation (TDLR) filing for Ramen Tatsu-Ya’s Pflugerville spot will be a nearly 3,000-square-foot newly built space in building 2, Suite 300 of 18725 FM 685. Construction on the estimated $1.4 million restaurant is expected to begin in early February 2027 and is slated to be completed by the end of June 2027.
Snooze’s TDLR filing shows the company is building a $1.2 million restaurant in building 1, Suite 230 of 18725 FM 685 in Pflugerville. Construction on the restaurant is anticipated to start in January 2027 and could be finished by the end of May 2027.
Founded in 2006 in Denver, Colorado, Snooze is a daytime U.S. restaurant chain specializing in breakfast, brunch and lunch options.
All TDLR filings are subject to change at any time. MySA reached out to Snooze for comment on the new location, but did not hear back prior to publication.
