Emery, the latest concept from chefs and restaurateurs Ian Thurwachter and Krystal Craig, will open Nov. 5 at 4800 Burnet Road, taking over the former Gusto space. The restaurant marks the third concept from the team behind Intero and Poeta.

The menu will center on regionally raised beef and steakhouse staples.

Diners can start with freshly baked baguettes, beef tartare and shrimp cocktail, or opt for more distinctive appetizers such as mushroom beignets with caramelized onions and salmon and spinach dip.

Among the entrees are Texas Wagyu steaks sourced from Peeler Farm in Floresville, limited quantities of chef’s prime rib served with au jus, horseradish cream and a double-cut pork chop. Other offerings include half chicken, broiled Gulf redfish and the house burger.

The menu will also include vegetarian options, including roasted acorn squash with brown butter and Parmesan. Gluten-free and dairy-free dishes will also be available.

Pastry chef Craig will oversee the restaurant’s dessert offerings, which include a flourless chocolate cake sundae and lemon meringue tart.

Emery will offer weekend brunch with dishes including prime rib and hash, carrot cake coffee cake and four varieties of eggs Benedict. Brunch will be served Saturdays and Sundays.

The beverage program will feature cocktails, a signature martini menu and seasonal specialty mocktails. The wine list will include selections from around the world, with an emphasis on French varietals. Beer offerings will include local breweries alongside domestic and imported selections.

A daily happy hour from 3 to 5 p.m. will feature specials on martinis, wine, starters and the restaurant’s signature burger.

Emery will be open daily, with weekday lunch, weekend brunch and dinner service. Hours are 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. to 10 p.m. Friday and Saturday. Reservations are encouraged through OpenTable. Walk-ins will be accepted.
