Lubbock’s wait for Portillo’s is almost over. The iconic Chicago-style restaurant is fully constructed and officially set to open on January 15, bringing one of the city’s most anticipated restaurant openings to fruition.

I lucked into an invite for a preview day (by signing up early for their rewards program) so I stopped by the completed location to take photos and get a closer look at what diners can expect when the doors open later this month. And I got to try the amazing food, too!

Construction Complete and Ready for Opening Day

The Lubbock Portillo’s location is no longer a construction site; the building is finished, signage is in place, and the restaurant is ready to welcome customers as soon as staff training is complete (the staff did an amazing job while we were there!).

Where Lubbock’s New Portillo’s Is Located

The new Portillo’s sits in a high-traffic area of Lubbock (in Canyon West shopping center, next to The Plaza), positioning it for strong opening-day crowds and steady demand moving forward. The location is designed to handle significant volume, something Portillo’s locations are known for across the country.

Why Portillo’s Arrival Is a Big Deal for Lubbock

Portillo’s has been one of the most requested restaurant additions in Lubbock in recent memory. Known for Chicago-style hot dogs, Italian beef sandwiches, burgers, and its famous chocolate cake, the chain brings a nationally recognized brand to the local dining scene.

Its January 15 opening adds another major name to Lubbock’s growing list of destination restaurants and reflects continued interest from national brands in expanding into West Texas.

What to Expect on Opening Day

With pent-up demand and strong local interest, opening day is expected to draw large crowds. Customers should anticipate lines, especially during peak meal times, as Lubbock gets its first taste of Portillo’s. However, I am confident that Portillo’s will handle the crowds efficiently and accurately, based on what I’ve already seen.
