Houston chef Hugo Ortega debuts Zaranda, a California-style Mexican spot opening Oct. 18 in downtown’s newest office tower.
HOUSTON — Acclaimed Houston chef Hugo Ortega and his wife and business partner, Tracy Vaught, are ready to open their latest restaurant in downtown’s newest office tower.
The couple’s company, H Town Restaurant Group, will open Zaranda in the Norton Rose Fulbright Tower at 1550 Lamar St. on Oct. 18. The tower overlooks Discovery Green and was previously known as 1550 on the Green until its anchor tenant moved in last year under a 15-year lease.
Zaranda will focus on offering California-style Mexican food, drawing upon influences from the northern and southern portions of the state.
Zaranda takes its name from the signature wire basket used to cook seafood and other items over hot coals or in a wood oven, a technique known as “zarandeado,” which originated in the Mexican state of Nayarit more than 500 years ago and is still commonly used throughout the Baja Peninsula.
