Blue Sky posted a reel on Facebook that says “beef tallow makes everything taste better,” which I agree is quite true. And while they didn’t mention it specifically, there is a growing number of people who are opting not to eat foods fried in seed oils due to health-related reasons. If you have a seed oil allergy or a chronic condition related to inflammation, switching to beef fat-fried treats may be a good idea (consult your doctor, of course). However, we should all keep in mind that any type of fried foods should be eaten in moderation (beef fat is full of saturated fat, as we all know).

Blue Sky isn’t alone: other Lubbock restaurants are increasingly opting for beef fat frying as seed oils face scrutiny in food-service circles. Cast Iron Grill (620 19th St) and Anna’s Mexican Restaurant (6909 Indiana Ave) both use beef tallow for deep fat frying.
