Low performer temporarily shut down for 38 violations

LUBBOCK, Texas (KCBD) – A Lubbock barbecue joint was temporarily shut down this week after it was cited for more than three dozen violations, many of them repeat violations.

J&M BBQ at 6023 82nd had 38 violations.

Due to the number of violations and repeat violations, the facility was forced to close it’s doors for 24 hours to clean-up.

Multiple food items in a steam table were not at least 135°.Sausage, ribs and brisket in a warming cabinet were not hot enough.The person in charge did not have a food thermometer to measure food temps.There was a plastic ice pack embedded in the ice in the ice machine.There was undrained condensation mixed with ice in an ice machine.The hose at the 3-compartment sink was leaking, and the faucet does not meet current plumbing code for commercial food service.The sprayer of the three compartment sink is hanging below the flood level rim.The food grader was dirty.A dirty wiping towel was on a cutting board and contaminating the food contact surface.A hand sink was not draining.There was no soap or paper towels at the hand sinks in the kitchen or in the restrooms.Raw fish was stored in a plastic shopping bag.The gaskets on the cooler were broken.Shelving had dirty, damaged and unsealed particle board.Foam was exposed on the interior door of the reach-in cooler.There were no sanitizing test strips available.Staff did not have certified food handler certificates.

The inspector notes, due to the number and the nature of the violations management did not show proper food safety knowledge.

In addition to the temporary closure, a reinspection fee was issued because of repeat violations.

Back outer door (southside of building) has gap between the door and the existing weatherstripping on the door frame when closed.Visibly soiled, wet wiping cloths are stored on prep tables between uses.A shopping bag with unpackaged raw fish was stored inside a pan of uncovered raw fish in the reach-in-cooler in the prep kitchen.Ice bucket is stored upright, and uncovered on top of the ice machine.The 3-compartment sink is attached to unsealed bare wood, and the sink surface is not sealed to the wood.Bulk sugar bin had the dispensing utensil’s handle not stored above the product.An open box of butcher paper is stored in a crate under the prep table with the food contact surface exposed to visibly soiled towels, and utensils in the front prep area.An open package of single service lids is stored in a crate under the steam table with a visible spill on the food contact surfaces of the lids.Single-service foam containers are being used to store uncooked pasta, and sauces in the prep area.Table with flat grill is visibly soiled with an accumulation of grease underneath the flat grill, on the sides of the table, and the prep table next to it.Ice machine in the back prep area is visibly soiled with spill on the lid, and around the bin opening.Ice machine in the front counter area is visibly soiled with sticky spots on the outer surfaces of the machine.Interior oven surfaces were visibly soiled with food debris, and baked on food residues.Bulk bin containing sugar is visibly soiled on the outer surfaces of the lid and container.Floors, walls, and ceilings in the food prep areas are visibly soiled.Two, not-in-current-use mops/mop heads were stored inside mop buckets in a manner that does not allow air drying between uses.One restroom did not have toilet paper.Not all hand sinks had hand wash signage.The 3-compartment sink has one discharge pipe that goes to the floor drain.

The facility was allowed to re-open after the re-inspection.

Rita’s Donuts at 6012 82nd had 20 violations.

Ready-to-eat kolaches and potatoes were not hot enough.Raw chorizo was stored above ready-to-eat salsa.The cook cracked raw eggs and then continued to make a burrito without washing their hands.Glass cleaner was stored next to food items.An employee washed their hands in the mop sink.There were egg shells in the hand sink.A broom was in the hand sink. Hand sinks are for hand washing only to prevent cross-contamination.Several food contact surfaces or utensils were broken or damaged. They must be kept in good repair.A non-food grade hose with a garden type sprayer was connected to the 4-compartment sink.Food handlers certifications were not available for all staff.The two certified food manager certifications had expired.

The inspector notes, due to the number and the nature of the violations management did not show proper food safety knowledge.

Back door next to the mop sink has a large gap on the bottom of the door.Plastic containers used for food storage have the retail sale stickers on the containers.Not-in-current-use mops are stored inside the mop bucket in a manner that does not allow airdrying between uses.Personal items are stored over food service items at the front counter.The in-use table top fryer is stored on the drainboard of the 4-compartment sink by the wash basin or dirty side.The walls around the ware washing sinks are visibly soiled, greasy.

The report shows most violations were corrected while the inspector was there.

Benjamin Donuts at 11814 Indiana had 10 violations.

Multiple food items in a cooler – including kolaches, burritos and cooked eggs – were above the cold temperature 41°. The ambient temperature was 50°. The thermometer inside the cooler was broken.Eggs were stored above milk.The magnetic knife holder was dirty.An insect spray not approved for a food establishment was in the facility.There was only hand sanitizer, and not soap, available at a hand sink.A spatula was damaged.

Dead juvenile cockroaches observed in dry storage area. Facility was unable to provide current pest control records from a licensed provider.Bulk containers of donut filling were stored directly on the ground in the dry storage area.No covered trash receptacle is provided in the women’s restroom for sanitary product disposal.

The report shows most violations were corrected at the time of the inspection.
