60 combined violations among three low performers this week

LUBBOCK, Texas (KCBD) – Several Lubbock restaurants were cited for multiple health code violations in recent inspections, including issues involving food storage, sanitizer levels and employee hygiene. Inspectors noted most violations were corrected during the visits, and four locations were recognized as this week’s top performers.

Back 40 Grill at 5214 98th St. had 17 violations.

Here’s a look at their priority violations.Raw ground beef was stored above ready-to-eat lettuce.The sanitizer solution was at toxic levels.The can opener and knife holder were dirty.Sticker residue was on metal containers.Cans were dented. This can cause botulism.Toxic items are not properly stored.A spatula was damaged.Logs were not available for reduced oxygen packaging.The inspector notes due to the number and the nature of the violations, management did not show food safety knowledge. The inspector goes on to say the facility has failed to comply with approved variance requirements.

Vent covers throughout the facility had visible dust on them.Scoop used to dispense flour from bulk storage was stored on top of the ice machine. Ice machine was visibly dirty.Metal containers were stacked wet on the drying rack in a manner that did not allow for proper air drying.Container of a white powder in the server’s station was not labeled to identify the contents.Container of a white powder in the dry storage was not labeled to identify the contents.Ice machine deflector plate was soiled on the nonfood-contact portion of the plate.Sticker residue was on the nonfood-contact surfaces of multiple metal containers, plastic containers, and other utensils. Utensils were all stored on the rack used to dry cleaned equipment.The report shows most of the violations were corrected the time of the inspection.

Kokio Chicken at 3211 50th had 20 violations.

Here’s a look at their priority violations.Ready-to-eat kimchi and cut onions did not have a date mark.Raw chicken was stored above rice cakes.A dirty knife was rinsed but was not sanitized before it was reused.A knife was dirty.There were no soap or paper towels at a hand sink.The drain line at the hand sink was leaking.Ceiling tiles in the food prep area are not approved for commercial kitchens.Food handler certificates were not available for all employees.

Sakura Japan (inside the South Plains Mall) at 6002 Slide had 23 violations.

Cooked noodles and hard boiled eggs did not have a date mark.A prep cooler did not have a thermometer.A knife had food debris on it.A hand sink was blocked.An employee put on gloves when switching tasks from working the cash register to working with food but did not wash their hands.Toxic items were not labeled or were improperly stored.The inspector notes, due to the number and the nature of the violations management did not show proper food safety knowledge.

Lid of ice machine had a sticky residue on its outer surface.Employee jacket, cigarettes, and personal drink were stored on a shelf in dry storage area above packaged brown sugar and other spices.Container of personal food was stored on a shelf in walk-in cooler above boxed raw chicken.Personal drink stored on front prep counter above packaged napkins.Brown residue accumulated under equipment in ware wash area.The report shows most violations were corrected while the inspector was there.
