It’s only been a few months since Paris Baguette first came to San Antonio, but the chain is now putting more chips on the table for an expansion into the Alamo City. After a second location was put on the books in February, yet another has been revealed for a major development in the Stone Oak area.
According to a recent filing with the Texas Department of Licensing and Registration, the city’s third Paris Baguette Bakery Cafe will land at Stone Oak Mercantile towards the end of the year. The filing reveals that the 3,750-square-foot bakery will come with a $750,000 price tag, and construction is set to kick off in early June. The projected completion date is currently at the beginning of October, though TDLR filings are subject to change.Â
Stone Oak Mercantile is a two-story, nearly 60,000-square-foot retail and dining development on Stone Oak Parkway and Canyon Golf Road on the Northside. According to Fulcrum Development’s website, it was planned for a Summer 2025 completion, but the site seemed to still be in progress in recent months. Meanwhile, a TDLR filing for the project slates it for a November 2026 wrap — a delay from the March 1 finish reported in July 2025.
When everything’s ready to go, Paris Baguette will join Crust Pizza, Box St. All Day Brunch, Swish Dental, and a nail salon, a site map shows. A flyer from Fulcrum Development also places Black Rock Coffee in the vicinity.Â
San Antonio’s first Paris Baguette debuted inside the newly-renovated Gunter Hotel in December 2025, offering sweets like chocolate-dipped croissants, tarts, cheese pastries, cakes and more alongside sandwiches, salads, wraps and an array of drinks. Seemingly, the location warranted the branching out from downtown into the Northside. The second location was announced in February and is expected to be completed in August. When opened, it will land at Fulcrum’s Landmark North development at the corner of I-10 and Loop 1604, rivaling La PanaderÃa’s massive 6,600-square-foot outpost only a few miles away.
The Stone Oak Mercantile development and Landmark North are about 12 miles apart, and the fact that two additional locations have been planned in such a brief period points to a swift takeover of the Alamo City for the South Korean chain founded in 1988.
