A new Mediterranean concept is getting close to opening in North Texas, and it’s bringing a mix of old-world cooking and modern automation with it. Robo Shawarma is currently in its final stages ahead of opening near the Plano-Frisco border, introducing a “shawarma bar” concept built around both traditional flavor and high-tech execution.
The restaurant is located at The Grove development in Frisco, just off Custer Road near State Highway 121.
A Concept Built Around Fire And Automation
Robo Shawarma’s approach is summed up in its tagline: Built by fire. Cut by machine. The cooking process stays rooted in tradition, with meats roasted using flame-based methods to develop the flavor shawarma is known for. Where the concept shifts is in the carving.
Instead of a cook manually slicing meat from the vertical rotisserie, the restaurant uses a robotic blade system designed to deliver consistent cuts, portion control and a more standardized preparation process.
The goal is to combine the texture and flavor of traditional shawarma with the efficiency and precision of automation.
What To Expect On The Menu
The menu is expected to follow a fast-casual, build-your-own format. Customers will likely choose between bowls and wraps, then customize with proteins, toppings and sauces in a format similar to other assembly-style concepts.
Core offerings are expected to include marinated beef and chicken shawarma, along with Mediterranean staples such as hummus, falafel and house-made sauces.
While no official opening date has been announced, the project appears to be nearing completion. State filings indicate the space, approximately 2,400 square feet, has already undergone buildout, and the company’s website currently lists its status as “calibrating,” suggesting a pre-opening or soft-launch phase.
As the restaurant moves closer to opening, it’s one to watch, especially for those curious about how technology is beginning to reshape even the most traditional dishes.
