After 25 years in business, a Missouri-based breakfast and lunch chain is targeting Texas as its next expansion destination.
The team behind The Big Biscuit, which has 30 locations across the Midwest and South, has its sights set on development opportunities in the Dallas–Fort Worth and Houston regions, according to a recent call for franchisees. But a few other additional markets across the state are under evaluation, too.
“As we look to expand into Houston, Texas is a natural step for The Big Biscuit,” president and CEO Chad Offerdahl said in an announcement. “Communities across Houston value the same thing we do: connection, hospitality, and a breakfast restaurant to bring people together. We’re looking for experienced restaurant operators who share our passion for hospitality and community initiatives, who are committed to quality food and operational excellence.”
Aside from big (freshly baked buttermilk) biscuits, The Big Biscuit serves a variety of comfort brunch bites like plate-sized pancakes, loaded chicken and waffles, stacked sandwiches, burgers, specialty grits and something called “scram-bowls.” These are bowls filled with scrambled eggs, breakfast potatoes, meats and veggies.

Dan Gerson founded The Big Biscuit, opening its original location in 2000 in Independence, Mo. A decade later, after a visit to that very same eatery, Offerdahl and his father bought the business from Gerson. Since, the concept has launched locations in Arkansas, Kansas, Missouri and Oklahoma.
The Big Biscuit isn’t the only biscuit brand heating up Texas’ brunch scene. North Carolina’s Bojangles recently opened its first Austin-area location in Manor, with more opening near Dallas-Fort Worth in the coming months. Later this fall, Kentucky’s Biscuit Belly is also planning to opening its first Texas location in Houston’s Heights neighborhood.
