LUBBOCK, Texas (KCBD) – One low performer with 30 violations this week, but we have 11 top performers.

Hibachi Express at 4409 114th had 30 violations.

Cooked chicken and rice were above the safe cold temperature of 41 degrees.Raw chicken was stored above raw beef, raw salmon and cooked noodles.A knife used to cut raw chicken was then used to cut carrots.A cell phone was on a sushi prep table.An employee did not wash their hands after handling their phone.An employee did not use soap when washing their hands.A knife block was in a hand sink. Hand sinks are for hand washing only to prevent cross contamination.A hand sink was blocked.Dirty containers were stacked with clean ones.A knife holder was dirty.A can opener was dirty.A can opener was heavily rusted.A spatula was damaged.Medication was stored above food items.A toxic item was improperly labeled.

The inspector notes, due to the number and the nature of the violations management did not show proper food safety knowledge.

Hand sink at the sushi prep station did not have a sign designating it was for hand washing only.Employee personal box of cigarettes was stored above food items in the dry storage area.Employee personal lotion was stored directly above a prep surface.Employee personal phone was stored directly on top of a box of single-use utensils.Wet mop, not in immediate use, was stored with the mop head directly in the mop bucket in a manner that did not allow for proper air drying.Vent covers in the front kitchen area were heavily soiled with a buildup of brown greasy debris.Vent covers in the kitchen were heavily soiled with a black debris.Container without a designated handle was used to dispense rice from bulk storage in the dry storage area.Metal containers in the drying area were stacked wet in a manner that did not allow for proper air drying.Bag of onions was stored directly on the ground in the kitchen.

The report shows most of the violations were corrected at the time of the inspection.
