The bakery produces its cakes in small batches using Texas-grown Pawnee and Cheyenne pecans sourced from Goldthwaite, Texas. Every cake is made with pure Grade A maple syrup, pure Mexican vanilla, Imperial Dark Brown Sugar, and unbleached flour – no hydrogenated oils, no high-fructose corn syrup, and no preservatives.
“We make one product, and we make it the right way,” said Scott McGee, who acquired Texas Pecan Cakes with his wife Carrie in 2024. “The recipe that Lorraine McCoy built in Refugio is still the recipe we bake today – the same ingredients, the same standard.”
Unlike most baked goods, Texas Pecan Cakes are shelf-stable for 21 days at room temperature – a result of ingredient quality, not preservatives. The cakes ship frozen, thaw cleanly at room temperature, and hold their texture and flavor through transit. They can also be frozen for up to 12 months in the original packaging.
