One of Boerne’s highly anticipated developments is beginning to take shape, with its first wave of restaurants set to open this summer, including several fast-casual chains making their Boerne debut.

Chicken Salad Chick, which bills itself as the nation’s only fast-casual chicken salad chain, will officially open at Boerne Town Center on May 20. Developer Andrew Bagnall told MySA the restaurant is just the beginning, with several other dining concepts expected to follow this summer.

The openings mark a major milestone for Boerne Town Center, a multimillion-dollar development that developers hope will transform the growing corridor into a regional retail and dining hub. The project’s next phase, valued at $12.3 million, is expected to break ground later this year and will include Boerne’s first national health-focused grocery chain, along with additional retail tenants.

Known for its made-from-scratch chicken salad offered in more than a dozen flavors, Chicken Salad Chick also serves fresh sides, soups, sandwiches and desserts.

The Boerne restaurant is part of a broader expansion by the franchise group, which also plans to open locations in Kyle this summer and in Schertz and Alamo Heights in the coming years, according to a news release.

While no other Boerne Town Center tenants have announced opening dates, Bagnall said additional restaurants and retailers are expected to debut this summer.

Bagnall added that multiple tenants are currently preparing to open over the coming months.

A Chipotle restaurant is already underway at Boerne Town Center, according to a state filing. In April, locals spotted signage installed on one of the storefronts, fueling speculation that the chain could open this summer.

A Panda Express location is also under construction at the development, according to signage near the site.

McAlister’s Deli filed plans with the Texas Department of Licensing and Regulation in January to complete a 2,795-square-foot interior finish-out at Boerne Town Center. Construction is expected to wrap up by May 20, according to the filing.

Nothing Bundt Cakes first filed plans for a Boerne Town Center location in 2023. At the time, construction was expected to be completed by May 2026.

Hawaii-based Bad Ass Coffee is also headed to Boerne Town Center, according to plans first filed last year. All TDLR filings are subject to change.
