LUBBOCK, Texas (KCBD) – A Lubbock donut shop is back open after the health department forced it to close and cleanup following its latest health inspection. This week, another donut shop is also on the bottom of the list.
Rita’s Donuts at 2625 50th was forced to temporarily close after health inspectors discovered they did not have the capacity to wash, rinse, sanitize and air dry contact surfaces of equipment and utensils.
That was just one of their 17 violations but mandatory for service:
Kolaches were not at least 135 degrees.The food warmer was not working.The person in charge was not able to answer questions about proper food temperatures.Ready-to-eat sausage did not have a date mark.Raw chorizo was above sauce.Pesticide labeled for household use was in the facility.Employees washed their hands in a 3-compartment sink.The 3-compartment sink was not plumbed correctly.Two of the basins were leaking.Equipment was not being sanitized. Utensils and food-contact surfaces must be sanitized after cleaning.The person in charge was not able to describe cleaning and sanitizing procedures for food contact surfaces.There were no sanitizing test strips available.

Kolaches were not at least 135 degrees.Kolaches were in containers from another retail store and did not have a date mark.Multiple items were dirty, including: food containers, a cutting board, utensils and bowls.Non-food grade trash bags were used to cover uncooked dough.Cooks cleaned tables, moved around personal items, went outside and returned to food prep without washing their hands.There were no paper towels at a hand sink.Dough cutters were kept in a metal lunch box.Lids on storage bins were cracked.Dishes were not being sanitized.Toxic items were not store properly.Certified Food Handler certificates are posted, but all are expired.The inspector notes, due to the number and the nature of the violations management did not show proper food safety knowledge.

Back door propped open during inspection with no activity occurring to justify it to be open.Containers with dry donut mixes are stored uncovered on a cart next to the mixer in the dry storage area.A 2-cup measuring cup is stored inside a box of prepackaged yeast on the table with the soiled mixer.Handles of scoops stored in contact with dry donut mix.Staff is reusing trash bags to cover trays of uncooked dough product.The outer surfaces of the reach-in freezer are visibly damaged with peeling paint.A not-in-current use warming cabinet next to the oven has a pan of cloudy water on the bottom surface, is visibly soiled, and has a foul odor.Bulk containers, and in-use buckets used for storing dry donut mixes are visibly soiled on the lids, and the outer container surfaces.Reach-in freezer by the oven has visible frost build-up on the shelves.Mixer in the dry storage area is visibly soiled on all the nonfood contact surfaces.Shelves with food service item storage under the prep table, and the lid of the larger reach-in freezer, were visibly soiled with food residues.A food service cart with the fryers are both visibly soiled with debris and grease residue.Personal items (purses, foods, drinks) are stored above food items in the reach-in cooler, and over single service aluminum foil sheets.Walls in all areas of the food prep, and food storage areas are visibly soiled.Floors under racks, and equipment is visibly soiled.The floor in front and behind the fryer is visibly damaged (missing tile, cracked), and causing the accumulation of waste food debris and grease to accumulate in the spaces.The wall by the donut fryer is visibly damaged with a dent. No longer sealed, easily cleanable.
