Rollin Joe’s is slated to open in late summer or early fall 2026. It’s located across the street from Southern Methodist University.
The shop was created to be a “vibrant gathering place for students, neighbors and visitors alike,” according to a news release. The plan is to sell espresso, matcha, smoothies, energy drinks and quick bites. It will turn into a lounge with DJs at night.
It will also have a walk-up window for drinks.
Rollin Joe’s is named for the fictional Joe, a character described in a statement as “a laid-back, music-loving personality.” The idea for the coffee shop comes from Jones’ nephew Jerry Mooty, an SMU alum and the CEO and Principal of Christie’s International Real Estate @properties Lone Star in Dallas. Joining Mooty in the project is Kirk Thompson, a Panera Bread and Jimmy John’s franchisee.

That address dates back decades as a sandwich shop. Since the 1970s, New York Sub was a casual, family-friendly spot. The restaurant closed in February 2026 after the building was sold. “I just can’t afford it,” New York Sub co-owner Andrew Kelley said after the building changed hands.
Mooty said in a statement that the former restaurant “holds a special place in the hearts of generations of SMU students and Park Cities residents.”
The new concept will be decidedly different, more of a “modern cafe,” according to the news release, with a vinyl listening lounge.
Rollin Joe’s is expected to open at 3411 Asbury St., Dallas, in late summer or early fall 2026.
