When travelers visit San Antonio, the River Walk is likely high on the list of places to visit, and for the last 40 years, Boudro’s Texas Bistro has been a consistent stop for riverside refreshments. Today, the downtown mainstay continues to serve up its signature tableside guacamole, Texas-forward coastal dishes and classic cocktails for tourists and locals alike.
Boudro’s first opened in 1986, drawing much of its inspiration from the Cajun cooking of New Orleans. A few years into its tenure, the restaurant moved more Southwestern with its cuisine while staying true to Texas flavors. MySA reached out to co-owner Andreas Esparza who shared some thoughts about Boudro’s extensive time on the River Walk.
“Since opening in 1986 for the Friday River Parade, our timing has been impeccable. Paul Prudhomme was a big influence in our early success, which helped shape our Gulf Seafood and Southwest forward menu,” Esparza shared via email.
Being smack dab in the center of San Antonio led Boudro’s to dream up some of its most popular dishes, namely the tableside guac that that continues to dazzle diners after decades. When guacamole is ordered, a server will roll over with a cart of fresh avocados, oranges and limes and whip that decadent dip together with a smattering of chopped onions, roasted tomatoes, peppers, cilantro and sea salt.
Other menu highlights include the Boudreaux’s shrimp and grits, mesquite-grilled Texas quail and prickly pear margaritas that can perfectly punctuate any River Walk pilgrimage. While the food and the river view are big draws, Esparza told MySA that the staff plays a significant role in establishing return customers and first-time patrons.
“This would not be possible without friendly, knowledgeable staff and our thoughtful management team,” Esparza commented. “As we look forward to the future here in San Antonio, we hope to maintain the same level of excellence that makes guests excited to return.”
Throughout its 40 years, Boudro’s has experienced a number of changes to its physical appears without losing its rustic charm. In 2025, the restaurant opened a new terrace bar and dining area, which is located just above its patio area. It just goes to show that even the most established businesses can continue to grow after several decades.
