LUBBOCK, Texas (KCBD) – A restaurant was temporarily shut down after inspectors discovered molded food and food held more than a month past its use-by date – those are just some of the violations in this week’s Food for Thought.
Yanagi Ramen at 11430 Quaker Avenue is back open after it was forced to close it doors temporarily following its latest health inspection.
Any facility that scores below a 70 is shut down for a minimum of 24 hours.
It had a score of 63 with 37 violations.
Rice was cooling in a deep container and was not cooling properly. This can cause bacteria growth.Crab meat and mixed veggies were above the safe cold temperature of 41 degrees.Fried rice was not hot enough.Raw shrimp was cooked to an internal temperature of 136 degrees. It must reach at least 145 degrees and remain at that temperature for a minimum of 15 seconds.The facility did not have food thermometer.Multiple items were stored in a way that did not prevent cross-contamination. Raw seafood was stored above vegetables. Raw chicken was above raw beef. Raw beef and chicken were above ready-to-eat pork.Pain relief gel and cough syrup were stored above food areas.Pesticide was above dry rice.An automatic soap dispenser was above a drying rack for dishes.An employee was cracking eggs on the edge of a hand sink. Hand sinks are for hand washing only to prevent cross contamination.There were no paper towels at two hands sinks.There was no soap at a hand sink.A hand sink was blocked.The sanitizer in the dish washer was not strong enough.
The inspector notes, due to the number and the nature of the violations management lacked active managerial control.

The restaurant was re-inspected and allowed to reopen.
Cesiah’s Panadería at 1519 34th St had 27 violations.
