Talk about a batch made in heaven. Levain Bakery — the world-renowned New York City phenomenon beloved for its extra thick chocolate chip cookies — is bringing Big Apple flavors to the Lone Star State as part of its latest expansion.
An approximately 1,555-square-foot project scope is detailed for the future bakery, located at 3120 Palm Way, Austin, TX 78758. Under preliminary timelines, construction is scheduled to begin on October 1, 2026 and wrap on or around March 1, 2027, per TDLR documents.
The renovation project also comes with a roughly $750,000 construction price tag, per TDLR. TDLR filings are estimates and both project timelines and construction costs are subject to change.
Levain Bakery — with its namesake paying tribute to the French word, “leavened bread” — first opened back in 1995 under the leadership of Pam Weekes and Connie McDonald, according to the business’ about page. The duo, who also competed in triathlons in their spare time, added walnuts to their chocolate chip cookies “to keep energy levels high for training,” business officials noted.
“A sample batch flew off the bakery shelves, and an icon was born,” Levain Bakery wrote online. “Our cozy shop became a neighborhood favorite and a destination for epicurious travelers from around the world.”
Alongside its inaugural outpost at 167 W. 74th St., NYC 10023, Levain is also home to nearly two dozen other locations across the U.S.: nine other bakeries in New York; four in California; one in Washington, D.C.; three in Illinois; one in Maryland; two in Massachusetts; one in Pennsylvania; and one in Florida.
