(Thomas Keller rumors intensify).
For more than a year, Dallas chefs have whispered that Thomas Keller might open a restaurant here. The celebrity behind triple-Michelin-starred The French Laundry in California and Per Se in New York is a regular visitor to Dallas, cooking at the annual TWOxTWO gala until its conclusion in fall 2024 and returning this spring to visit his friends’ new restaurant, La Lupita Taco y Mezcal. Over the years he’s dined at Il Bracco, FT33, Homewood, Georgie, Gemma, and Tei-An.
Where would a Thomas Keller restaurant go? One rumor zeroes in on Knox Street, suggesting that he might move into a new high-rise in the growing district. But another rumor I heard early this year hinted that he would take over one of the city’s most famous legacy kitchens: The Mansion Restaurant, former haunt of Bruno Davaillon, John Tesar, and Dean Fearing.
Ridiculous, I thought. The Mansion already has a talented high-end chef, Charles Olalia. They wouldn’t kick him out even for America’s most famous chef, would they?
Not a problem anymore. Olalia is now, in a fascinating career move, culinary director of Katz Bros. Hospitality, overseeing the kitchens at Beverley’s, Clifton Club, Green Point, and Claremont. In a press release this morning, Greg Katz says, “Having Charles as our culinary director signals a shift in the way we’re moving forward. We have really exciting things happening with our restaurants, including a new project to be announced soon, and Charles’s point of view and hands-on approach will be instrumental for our growth.”
Sounds promising. I can’t wait to see how the quartet of restaurants evolve with Olalia’s personal touch and fine dining experience. I’m curious what the new project is and whether it connects with Olalia’s Filipino heritage.
But then there’s The Mansion. It’s looking for an executive chef. It’s rumored to have interest in America’s most famous chef. It’s exactly the kind of old-school high-end property that that chef is associated with. I have no inside information whatsoever. I have no evidence of any kind. I can’t predict the future. But…Thomas Keller? The Mansion? Eh? Eh? Wink wink, nudge nudge?
