What’s a barbecue restaurant without brisket? Butter’s BBQ, one of the top smoked meat establishments in Texas, has revealed its new lineup sans the crucial third of the Texas barbecue trinity.
To make up for axing brisket, the Sinton barbecue restaurant is now offering beef cheek served in plates and sandwiches.
“It’s the same cut we use for our barbacoa, but we just cook it like a brisket,” co-owner Andrew “Butter” Soto said in a video posted on Facebook last Thursday. “You’ll be surprised how much alike it does taste like fatty brisket or a marble brisket.”
Butter’s BBQ’s other new menu offerings include Carolina gold pork belly burnt ends cooked in a mustard sauce, “backyard-style chicken” served with the restaurant’s house sauce and baby back ribs. The latter is replacing the pork spare ribs which have also been pulled off the menu. Its turkey breast and house links will still be available.
As for sides, Soto said they changed everything up except elotes. Its homestyle potato salad has been replaced with a loaded baked potato salad, topped with chives and smoked bacon. Ranch-style beans have replaced the borracho beans, and chorizo queso grits have replaced the mac and cheese.
The new menu is already available, which Soto said will not include brisket until they see help with the pricing.
But the good news for brisket fans is that it isn’t gone for good. While brisket isn’t available on Butters BBQ’s daily menu, Soto announced that the restaurant will be implementing a new online ordering system specifically for brisket so guests can preorder and pay ahead for pickup orders.
“Everybody’s worrying that they might not ever get the brisket again– that’s not true. We’re just going to be basically taking it off our menu here at the shop, but be on the lookout in the next few weeks for that ordering system,” he said in the video.
