A Michelin-recognized food truck touted as home to Texas’ best tacos is now moving forward with its goal to open its first brick-and-mortar location in Austin. Cuantos Tacos recently submitted construction plans revealing new details on when the restaurant could be completed next year.
Although Cuantos has not yet shared when the new restaurant will open, MySA reached out to Robledo for more information. Construction on Cuantos’ rnew 1,800-square-foot restaurant began on January 1 and is expected to wrap by March 31, 2027, according to the TDLR. However, all TDLR construction timelines are subject to change at any time.
Founded by Robledo in 2019, Cuantos Tacos is known for its Mexico City-style, bite-sized tacos made with meats like confit brisket (suadero), barbacoa (cachete), pork (carnitas) and Mexican chorizo (longaniza). Over the past seven years, Cuantos has earned huge acclaim from foodies in and out of Austin with Yelp crowning it the best taco spot in Texas in 2024 and the truck receiving a prestigious Michelin Bib Gourmand award that same year.
Earlier this year, Robledo said the new Cuantos will continue the “vibe” of his signature truck in Arbor Food Park located at 1108 E. 12th St. He aims to have trailers on site, patio seating outside and indoor seating with a bar inside.
The menu is also expected to grow with new items and daily specials such as a small selection of Mexican beers, Mexican wines, frozen margaritas and some mixed drinks, according to Robledo.
