Late-night bakery chain plans third store

  • November 12, 2025

SAN ANTONIO – A Philadelphia-based bakery chain that caters to the late-night crowd is opening downtown.

Insomnia Cookies plans to open its newest store at 122 E Houston St., Suite 104, according to project details filed with the Texas Department of Licensing and Regulation.

Construction on the estimated $241,297 project is expected to begin in December and be completed by January of next year.

The 1,329-square-foot chain will take shape across the street from the Embassy Suites Riverwalk Hotel and in proximity to several other downtown restaurants, including Royal Blue Grocery, Bunz Handcrafted Burgers, Acenar Mexican Restaurant, and Chick-fil-A.

Onyx Creative, an Ohio-based architecture, engineering and interior design company, is serving as the design firm on the project, according to the filing.

The Business Journal reached out to Insomnia Cookies for comment on the new location but did not receive a response by publishing.

The chain first expanded to the Alamo City in 2024 with the opening of two locations on the Northwest Side, at 4316 Gardendale Road in the Medical Center and 6010 UTSA Blvd. Suite 104 near the University of Texas at San Antonio.

Insomnia Cookies was founded in 2003 by Seth Berkowitz, a student at the University of Pennsylvania at the time.

In 2006, the late-night bakery opened its first brick-and-mortar location in Syracuse, New York.

The brand has since expanded with over 300 locations across the U.S.

Its presence in Texas includes over 29 storefronts spanning from Lubbock to the Rio Grande Valley.
