The restaurant brand promoted industry veteran Michael Mabry as it prepares for major expansion across Texas and Louisiana

From a single restaurant in Plano to an ambitious goal of 50 locations, Dillas Quesadillas is preparing for its next stage of growth. The North Texas-based restaurant brand has promoted Michael Mabry to chief operating officer, a newly created position designed to support expansion as the company grows beyond its current 11 locations.

Effective Oct. 7, Mabry will oversee daily operations, marketing and franchise sales, allowing co-founders Kyle and Maggie Gordon to focus on growth strategy and capital.

“Michael knows Dillas, knows us and understands what it takes to scale a restaurant brand,” Kyle Gordon, co-founder and CEO of Dillas Quesadillas, said in an official statement. “We have six restaurants in the DFW franchise pipeline and additional growth underway in Louisiana.”

Preparing For The Next Chapter

Mabry brings more than 30 years of restaurant industry experience, including leadership roles at MOOYAH Burgers, Fries & Shakes, Fuzzy’s Taco Shop and Famous Toastery. He joined Dillas in August 2025 as head of franchise development, although his relationship with the Gordons dates back more than a decade.

Founded in Plano in 2013, Dillas has grown into a regional restaurant brand with locations across Texas and Louisiana. Its journey from a single quesadilla concept to a growing business reflects how Dillas turned quesadillas into a Texas success story.

The company has spent nearly two years strengthening operations, simplifying its menu, investing in technology and streamlining restaurant processes to prepare for additional growth.

Dillas also recently opened its first nontraditional location inside Brookshire Grocery Arena in Bossier City, Louisiana.

What’s Next For Dillas?

The company expects to approach $20 million in systemwide sales in 2026 and is targeting 50 locations by 2028. Mabry’s promotion is intended to help keep operations, marketing and franchise development aligned as the brand adds restaurants.

“Growth only works if our teams and franchise partners have the systems and resources to support it,” Mabry said.

With six additional restaurants in the DFW franchise pipeline and expansion underway in Louisiana, the Plano-founded company is positioning itself for a much larger footprint over the next two years.
