The iconic chain Portillo’s is officially coming to Lubbock, and it appears that we now know the opening date, thanks to a moderator of LBK Foodies: January 15th, 2026.

What To Know About Portillo’s Construction In Lubbock

 

The new Portillo’s in Lubbock will be located in the Canyon West shopping center, the massively popular retail and dining hub near the Marsha Sharp Freeway / Milwaukee Avenue corridor.

The planned building is ~6,250 square feet, following the brand’s newer “Restaurant of the Future” design. That means a more streamlined layout, with indoor/outdoor seating and efficient service.

For convenience, Portillo’s is building two drive-thru lanes, “Pick Up” shelves for online or pickup orders, and a “Grab & Go” retail-style area for quick orders — ideal for takeout, late-night runs, or on-the-go meals.
