One of the best barbecue joints in Texas will be kicking off the new year with expansion at front of mind. Despite apparent delays for its fall 2025 opening in the Austin area, new paperwork is shining a light on when barbecue enthusiasts can visit the newest home for smoked meat.

Schoepf’s BBQ – the Texas Monthly Top 50 BBQ Joints honorable mention out of Belton – announced in June that it was expanding for the first time with its second-ever smokehouse planned for Georgetown, north of Austin. Schoepf’s has been serving barbecue in Central Texas for over 30 years and told MySA it was hoping to open the Georgetown outpost between August and September, but new filings from the Texas Department of Licensing and Regulation show work is still to be done.

A filing from Tuesday, September 9, shows that a $250,000 “partial interior demolition and reconstruction” is set to take place at the 2,400-square-foot Georgetown restaurant. Schoepf’s construction is expected to start on January 1, 2026 and is aiming to wrap up on March 1, 2026, according to the TDLR. All TDLR filings are subject to change without notice.

“My wife [Staci] and I are super excited about this new venture and being a part of something that’s already such a great happening scene, and hopefully we can do nothing but be a part of that and make it even better than it already is,” co-owner Ronnie Schoepf said in June.
