Austin, Texas– Best Dish Yet! Sierra Waggoner sinks her teeth into some serious BBQ at Stubb’s Bar-B-Q, where she’s on a mission to find the perfect food pairing for a cold, refreshing, non-alcoholic Kölsch from Best Day Brewing — and let’s just say, it might be your Best Day yet!

She’s joined by Ryan Garrett, the longtime General Manager who’s been with Stubb’s for 25 years, working nearly every job from the kitchen to the front of house.

If you haven’t made your way downtown lately, now’s the time. Stubb’s, born in Lubbock and now the heart and soul of Austin, is known for legendary live music, weekend Gospel Brunch, and of course, Texas-style BBQ done right!

Before sitting down to eat, Sierra got a peek behind the scenes to see the delicious brisket-making process — slow-smoked and packed with flavor. As Ryan puts it, “You ain’t worth your salt in Texas if your brisket’s no good.”

Thankfully, Stubb’s brisket is more than good — it’s next-level delicious.

Everything is house-made, from the creamy slaw and classic potato salad, to the zesty, serrano cheese pepper spinach (Sierra’s personal favorite, besides the brisket, of course). And no meal is complete without their rich, slow-simmered pinto beans.

To wash it all down? Sierra found the perfect pairing in Best Day Brewing’s Kölsch. It’s light, crisp, and easy-drinking, with a toasty malt character and a clean finish that pairs beautifully with bold, smoky BBQ.
