Tortillas remain foundational. The dining room overlooks a hillside of legacy oaks, and guests may arrive from fitness sessions, medical consultations or time spent at the resort\u2019s spa.<\/p>\n<p>Cant\u00fa avoids framing the food as \u201chealthy,\u201d a term he resists.
