Three notable restaurants opening a few weeks apart have set up shop in historic buildings and are awaiting visitors, likely from all over Texas.<\/p>\n<p>Whether Fort Worth travelers are looking to fold these spots in as they&#8217;re just passing through the region, or they&#8217;re hoping to make a whole getaway out of it, here&#8217;s a rundown of three new destination restaurants for a Hill Country to-do list.<\/p>\n<p><a href=\"https:\/\/www.instagram.com\/roxiesbuda\/?hl=en\" target=\"_blank\" rel=\"nofollow noopener\">Roxie&#8217;s<\/a> \u2014 308 S Main St., Ste. 101, Buda<br \/>At the top of the &#8220;highly anticipated&#8221; list is Roxie&#8217;s, a Southern restaurant in Buda by Scott Roberts, current owner of famous barbecue joint The Salt Lick in Driftwood. In fact, the property even made <a href=\"https:\/\/austin.culturemap.com\/news\/restaurants-bars\/bon-appetit-roxies-buda\/\" target=\"_blank\" rel=\"nofollow noopener\">Bon Appetit&#8217;s 2025 list<\/a><a href=\"https:\/\/austin.culturemap.com\/news\/restaurants-bars\/bon-appetit-roxies-buda\/\" rel=\"nofollow noopener\" target=\"_blank\"> <\/a>of &#8220;The 8 Must-Visit Restaurants to Try This Fall&#8221; \u2014 back when it seemed like it&#8217;d be open by then.<\/p>\n<p>It wasn&#8217;t too late on the draw, opening on January 28, 2026, almost exactly a year after it was announced.<\/p>\n<p>Roxie&#8217;s is named after Roberts&#8217; grandmother, and the restaurant further ties him to Buda, the town where he went to elementary school. The food on offer \u2014 dishes including pimento cheese with crudites and crackers, Hill Country sliders, fried chicken wings, burgers, chili dogs, and Roxie\u2019s famous biscuit \u2014 nod to Roxie&#8217;s home cooking. Appropriately, there&#8217;s also a family-style dinner that groups can share.<\/p>\n<p>The building&#8217;s heritage is almost as interesting as the concept&#8217;s. Roxie&#8217;s is <a href=\"https:\/\/austin.culturemap.com\/news\/travel\/buda-mill-grain-welcomes-roxies-and-revives-a-historic-texas-landmark\/\" target=\"_blank\" rel=\"nofollow noopener\">located in the Buda Mill &amp; Grain<\/a>, a farm structure that was renovated into a 27,000-square-foot retail center. Guests at Roxie&#8217;s may stop by several other stores on the property, totaling a dozen more local businesses. Those including tasting room <a href=\"https:\/\/www.water2wine.com\/newbraunfels\/\" target=\"_blank\" rel=\"nofollow noopener\">Water2Wine<\/a>, home goods shop <a href=\"https:\/\/www.themercantileatmillandgrain.com\/\" target=\"_blank\" rel=\"nofollow noopener\">The Mercantile at Mill + Grain<\/a>, and the lush <a href=\"https:\/\/saintmontogren.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Saint Montogren\u2019s Florist<\/a>.<\/p>\n<p><a href=\"https:\/\/www.saludosnbtx.com\/about-5\" target=\"_blank\" rel=\"nofollow noopener\">\u00a1Saludos! Cocina + Bar<\/a> \u2014 388 E. San Antonio St., New Braunfels<br \/>\u00a1Saludos! Cocina + Bar <a href=\"https:\/\/www.instagram.com\/p\/DUMIgE9jzGf\/\" target=\"_blank\" rel=\"nofollow noopener\">greeted<\/a> the bedroom community of New Braunfels on February 2, bringing Mexican cuisine to the historic Dittlinger Roller Mills downtown.<\/p>\n<p>Brothers Israel Trevino (<a href=\"https:\/\/www.lasfontanaskitchen.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Las Fontanas<\/a> in New Braunfels) and Daniel Trevino (<a href=\"https:\/\/boxstallday.com\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Box St. All Day<\/a> in San Antonio) teamed up with Edward Garcia III and Allen Shy (<a href=\"https:\/\/www.crafthousetx.com\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">CRAFThouse<\/a> and <a href=\"https:\/\/www.blindsalamandercantina.com\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Blind Salamander Cantina<\/a> in San Marcos) to give the 1887 former flour mill new life.<\/p>\n<p>The menu is inspired by Mexican street food, with standout dishes including vampiro-style tacos, rajas con crema, and cochinita pibil flautas, fajitas and enchiladas rojas, and a few cross-cultural surprises like a Caesar salad. The spot also has a \u201cdinner\u201d menu that gives diners a little more variety with dishes like a fish of the day, schnitzel, burgers, and vegan tofu skewers. There&#8217;s a vast dessert menu and a full bar program with premium spirits, beer, and wine.<\/p>\n<p>Given the Instagram-friendly interiors of Box Street, it\u2019s no surprise that the restaurant is decked to the nines. A dusty terracotta and grass green color scheme is accented by Talavera tiles and contemporary Mexican artwork and accents.<\/p>\n<p><a href=\"https:\/\/www.oldcityhalltx.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Old City Hall Restaurant and Bar<\/a> \u2014 200 N. Seguin Ave., New Braunfels<br \/>New Braunfels\u2019 Old City Hall will soon be back in session, this time for dinner. On February 17, the team behind some of the city\u2019s most popular eateries will open Old City Hall Restaurant and Bar inside a landmark former municipal building.<\/p>\n<p>The project comes from <a href=\"https:\/\/www.whgrestaurants.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Wiggins Hospitality Group<\/a>, the local team behind Hill Country hot spots like <a href=\"https:\/\/www.mcadoos.com\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">McAdoo&#8217;s Seafood Company<\/a> and<a href=\"https:\/\/www.lacosechatx.com\/\" rel=\"noopener noreferrer nofollow\" target=\"_blank\"> La Cosecha Mexican Table<\/a>. The company has been hard at work transforming the nearly century-old building into a dining destination. Previously, the site has served as New Braunfels Police Department headquarters, a World War II medic training site, a museum archive, and, most recently, city hall itself.<\/p>\n<p>The menu features refined takes on classic American fare. Menu highlights include Texas beef or tuna tartare, spicy vodka rigatoni, peppercorn filet mignon, and The Mayor\u2019s Cheeseburger \u2014 double beef patties sandwiched with American cheese, house pickles, caramelized onion, and a b\u00e9arnaise a\u00efoli.<\/p>\n<p>The cocktail program is equally timeless. Guests can sip on ice-cold martinis (both traditional and newfangled), negronis, frozen gin and tonics, and originals like the Beretta with Still Austin cask-strength Bourbon or a margarita with egg white foam.<\/p>\n<p><script async src=\"\/\/www.instagram.com\/embed.js\"><\/script><\/p>\n","protected":false},"excerpt":{"rendered":"The Texas Hill Country is booming \u2014 at least when it comes to restaurants right now.
