They closed the dining room for 10 days without explanation. <\/p>\n<p class=\"body-text-paragraph\">In a quick turn, this eight-year-old Italian restaurant was redesigned with a moodier dining room and reimagined menu. <\/p>\n<p class=\"body-text-paragraph\">The Charles reopened Feb. 9, 2026, more confident than ever. But wait. Nearby, <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2026\/02\/09\/is-delilah-dallas-restaurant-worth-the-hype\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2026\/02\/09\/is-delilah-dallas-restaurant-worth-the-hype\/\">flashy, new supperclub Delilah opened<\/a> recently, as did <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2026\/02\/04\/how-chef-shurley-chung-beat-cancer-opened-dallas-night-rooster-restaurant\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2026\/02\/04\/how-chef-shurley-chung-beat-cancer-opened-dallas-night-rooster-restaurant\/\">modern Chinese restaurant Night Rooster<\/a>. A <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/12\/26\/where-to-eat-new-restaurants-dallas-fort-worth-opening-2026\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/12\/26\/where-to-eat-new-restaurants-dallas-fort-worth-opening-2026\/\">diner called AM\/FM<\/a> is one of several new restaurants coming soon in the neighborhood.<\/p>\n<p class=\"body-text-paragraph\">But when The Charles debuted in 2018, Homsey and co-founder Chas Martin felt they took a chance on the Design District, a neighborhood some Dallas diners had to plug into Google Maps to find. The two thought they\u2019d open one restaurant, for fun. Eight years later, their Duro Hospitality operates a half-dozen eateries in Dallas and Fort Worth, and the company has become one of D-FW\u2019s boldest restaurant groups. <\/p>\n<p class=\"body-text-paragraph\">First-born son The Charles needed a new set of clothes. Chastain. He was once executive chef for Stephan Pyles and executive sous chef for Bruno Davaillon at the Mansion. Those walls covered in pages from Italian pin-up magazines were hung by the company founders in 2018, after a long night of drinking. Every once in a while, a customer complains about the lascivious photos in the loo, but The Charles\u2019 owners brush it off. They like pushing limits. <\/p>\n<p class=\"body-text-paragraph\">The wallpaper near the bathrooms didn\u2019t change, either: Those are prints of the owners\u2019 wives\u2019 boobs and butts, repeated in a pattern. Set it in the center of the table. Just like at our house.\u201d <\/p>\n<p class=\"body-text-paragraph\">Refreshing the restaurant keeps it relevant, the owners said. Diners will notice about half of The Charles menu has changed, totaling 18 new dishes.<\/p>\n<p class=\"body-text-paragraph\">Chefs kept nearly all of the pastas that became so popular. The spicy shrimp pasta ($29), white Bolognese ($26) and amatriciana ($28) have been on the menu since Day One, and they remain. New is a $32 \u201csnow crab 6-pack,\u201d a fun name for seafood ravioli sauced tableside with vadouvan cream, then cut with a pizza roller. The shareable Wagyu short rib dish ($59) comes with \u201csticky shallots\u201d and a brown butter balsamic dressing. And what are we tasting on the steak rub? Salt, pepper and a little coffee.<\/p>\n<p class=\"body-text-paragraph\">\u201cWe don\u2019t always talk about the extra things we do,\u201d Chastain said. He doesn\u2019t want servers over-explaining the food; the owners pride themselves in an air of effortlessness, even with complex preparations. Most customers may not ask about the little details, Chastain said. But for those who do: \u201cThe coffee,\u201d he said, \u201cjust gives it earthiness.\u201d<\/p>\n<p class=\"body-text-paragraph\">Now that the company operates a contemporary Mexican restaurant called <a href=\"\" rel=\"\" title=\"\">El Carlos Elegante<\/a>, a Japanese grill in <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/08\/11\/who-is-norman-japanese-grill-new-dallas-restaurant\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2025\/08\/11\/who-is-norman-japanese-grill-new-dallas-restaurant\/\">Norman\u2019s<\/a>, French-Italian fine-dining spot <a href=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2023\/07\/21\/edgy-dallas-restaurant-mister-charles-now-open-in-place-of-highland-park-soda-fountain\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.dallasnews.com\/food\/restaurant-news\/2023\/07\/21\/edgy-dallas-restaurant-mister-charles-now-open-in-place-of-highland-park-soda-fountain\/\">Mister Charles<\/a> and others, rethinking The Charles seemed essential.<\/p>\n<p class=\"body-text-paragraph\">\u201cOur confidence has gone up,\u201d Homsey said.<\/p>\n<p class=\"body-text-paragraph\">The Charles is at 1632 Market Center Blvd., Dallas.
