HOUSTON, Texas (KTRK) — As crawfish season ramps up, the tables at Crawfish Cafe will be busy. The restaurant averages about 35,000 pounds of crawfish each season.<\/p>\n
Crawfish Cafe has grown to five locations across the Houston region, with the first spot opening in 2013.<\/p>\n
At the time, the owners, Kiet Duong and Julie Nguyen, were not trained chefs. They didn’t go to culinary school. Instead, their journey started in the backyard.<\/p>\n
“Growing up, it was something we were always doing in our backyard, having crawfish boils with your families,” Nguyen said.<\/p>\n
Today, Crawfish Cafe is known for blending Cajun flavors with a Vietnamese twist, short known as Viet-Cajun.<\/p>\n
“Viet-Cajun crawfish is basically traditionally cooked Louisiana crawfish but with a bit of extra sauce and seasoning,” Nguyen shared.<\/p>\n
Duong added, “We get a daily delivery from Louisiana, and as soon as it gets to the restaurant, we hand sort every single crawfish.”<\/p>\n
