\t\t\t\t\t\t\tIchika recently opened in Plano, business owner Leo Kekoa said.<\/p>\n
The restaurant is Texas\u2019 first kaiseki-dedicated restaurant and one of the few kappo-style dining experiences in the country, Kekoa said in an email.<\/p>\n
\u201cKaiseki represents the highest expression of Japanese cuisine\u2014a seasonal journey that honors nature, simplicity, and restraint,\u201d Kekoa said. \u201cRooted in ichigo ichie\u2014one time, one meeting\u2014each course is carefully composed to reflect the fleeting beauty of the moment\u2014from delicate sashimi to steamed, grilled and fried preparations, [which are] often guided by the rhythms of the land and sea.\u201d<\/p>\n
Kekoa said kappo-style kaiseki is traditionally served in formal dining rooms but that will not be the case at Ichika.<\/p>\n
\u201cHere, chefs prepare and serve each dish directly in front of you, in an open and intimate setting \u2014 a quiet dialogue between craftsmanship and hospitality,\u201d Kekoa said.<\/p>\n
Kekoa, who also co-owns Kinzo<\/a> in Frisco, is one of three master chefs leading the culinary program at Ichika.
