After <a href=\"https:\/\/www.mysanantonio.com\/food\/article\/paris-baguette-san-antonio-21358056.php\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">a second location was put on the books<\/a> in February, yet another has been revealed for a major development in the Stone Oak area.<\/p>\n<p>According to<a href=\"https:\/\/www.tdlr.texas.gov\/TABS\/Search\/Project\/TABS2026016162\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\"> a recent filing<\/a> with the Texas Department of Licensing and Registration, the city&#8217;s third Paris Baguette Bakery Cafe will land at Stone Oak Mercantile towards the end of the year. The filing reveals that the 3,750-square-foot bakery will come with a $750,000 price tag, and construction is set to kick off in early June. The projected completion date is currently at the beginning of October, though TDLR filings are subject to change.\u00a0<\/p>\n<p>Stone Oak Mercantile is a two-story, nearly 60,000-square-foot retail and dining development on Stone Oak Parkway and Canyon Golf Road on the\u00a0Northside. <a href=\"https:\/\/www.fulcrumsa.com\/project\/stone-oak-mercantile\/\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">According to Fulcrum Development&#8217;s website<\/a>, it was planned for a\u00a0Summer 2025 completion, but the site seemed to still be in progress\u00a0in recent months. Meanwhile, a\u00a0TDLR filing for the project slates it for a November 2026 wrap \u2014 a delay from the March 1 finish reported in July 2025.<\/p>\n<p>When everything&#8217;s ready to go, Paris Baguette will join Crust Pizza, Box St. All Day Brunch, Swish Dental, and a nail salon,<a href=\"https:\/\/www.fulcrumsa.com\/wp-content\/uploads\/2021\/10\/SOM-Combined-Site-plans.pdf\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\"> a site map<\/a> shows. A <a href=\"https:\/\/www.fulcrumsa.com\/wp-content\/uploads\/2021\/10\/Stone-Oak-Mercantile-Flyer-01.15.26-Email.pdf\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">flyer <\/a>from Fulcrum Development also places Black Rock Coffee in the vicinity.\u00a0<\/p>\n<p>San Antonio&#8217;s first Paris Baguette debuted inside the newly-renovated <a href=\"https:\/\/www.mysanantonio.com\/lifestyle\/article\/gunter-hotel-san-antonio-most-haunted-21096072.php\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">Gunter Hotel<\/a> in December 2025, offering sweets like chocolate-dipped croissants, tarts, cheese pastries, cakes and more alongside sandwiches, salads, wraps and an array of drinks. Seemingly, the location warranted the branching out from downtown into the Northside. The second location was announced in February and is expected to be completed in August.
