In March, he finally opened a standalone brick-and-mortar, serving Southern food with international influences. Imagine fried green tomatoes with smoked catfish dip and hot sauce \u201ccaviar,\u201d or brisket ramen with crispy puffed beef tendon. Later in the day, gnocchi, manti, smoked beef sandwiches and cheeseburgers are all on the menu. Joey Chavez\u00a0\u2014 who\u2019s worked at restaurants including the French Laundry and Brennan\u2019s of Houston\u00a0\u2014 is focusing on Italian flavors at the new endeavor. Customers can grab a\u00a0mortadella sandwich with stracciatella and pistachio, or a spicy salami with whipped ricotta cheese and pepper spread. Trung Nguyen Legend arrived in a 4,700-square-foot space with several different blends of Vietnamese coffee\u00a0\u2014 including one that\u2019s made smoother by processing it with synthetic enzymes that mimic a civet\u2019s digestive tract. Now, the brand is bringing those foods to Montrose. In a spot that once housed a Starbucks, the new cafe sells drinks like its brown butter maple latte. Those influences are clear in the basil conchas, the\u00a0tomato-feta-za\u2019atar Danishes and the halal chorizo croissant that the husband-and-wife duo put on the menu. Their drinks are equally inventive.
