At nearly 75 years old, Stan\u2019s Blue Note on Dallas\u2019 Greenville Avenue is the kind of bar that feels like it never changes. Regulars drink Busch Light and eat chicken wings, and most of them have a favorite barstool.<\/p>\n

So you can imagine the flurry of Facebook comments<\/a> when the owner announced that as of April 1, 2026, this Dallas institution since 1952<\/a> has two new operators.<\/p>\n Article continues below this ad<\/p>\n Owner Mo Sherbi and director of operations Reid McRae aren\u2019t so different from the customers concerned about the future of this longtime Dallas bar. McRae\u2019s dad, Mike McRae, owned Stan\u2019s for the past 10 years<\/a>. When he retired, the younger McRae and his buddy Sherbi jumped at the chance to buy the bar where they\u2019d spent so much time.<\/p>\n \u201cStan\u2019s was our go-to every night,\u201d Sherbi said.<\/p>\n Neon beer signs decorate the walls of Stan’s Blue Note on Greenville Avenue in East Dallas. The bar opened in 1952. Over the decades, owners took over\u00a0the space to the right, then the space to the left. The dive bar still feels like a patchwork puzzle.<\/p>\n DMN file photo\/Summar May<\/p>\n Sherbi is a Dallas home builder who owns a stone company that sells slabs for kitchen islands and bathroom countertops. McRae grew up in the restaurant industry, as his dad co-owned several spots, including the original Dick\u2019s Last Resort in Dallas until 2021. They also hope, someday, to cover the front patio and add live music.<\/p>\n Article continues below this ad<\/p>\n The Dallas Morning News asked Stan\u2019s new operators your burning bar questions.<\/p>\n Will Stan\u2019s close during renovations?\u00a0\u00a0<\/p>\n No. If it can stay open during most ice storms \u2014 and it has \u2014 Stan\u2019s will stay open while its four bathrooms are renovated, the new operators said. One set of men\u2019s and women\u2019s will remain open while the other two are redone.\u00a0<\/p>\n \u201cWe\u2019re making change for the better; we\u2019re not taking away anything that\u2019s already great,\u201d McRae said. So what will change?<\/p>\n \u201cEverything that\u2019s classic and essential Stan\u2019s, we\u2019re keeping,\u201d McRae said.<\/p>\n He and Sherbi confirmed the burgers will remain, though they will add a smashburger. Mozzarella sticks: staying. Chicken tenders: staying, though the batter will get a slightly new recipe. Gabe\u2019s Spaghetti Dinner, a dish named after retired Stan\u2019s employee Gabe Nicolella: staying.<\/p>\n The salads will get a redo. \u201cWe\u2019re going to try to make a salad that people will order,\u201d McRae said with a laugh.\u00a0<\/p>\n Article continues below this ad<\/p>\n He\u2019ll add a chicken Caesar wrap, a dish hitting peak popularity on Instagram.<\/p>\n One of the charms of Stan’s is its longtime reputation as a meet-up spot for coed kickball teams, runners clubs and football fan groups. Those are not changing,\u201d McRae said. Buffalo-tossed wings come with the option of ranch or blue cheese dippers, like usual.<\/p>\n Article continues below this ad<\/p>\n But\u00a0McRae\u00a0and\u00a0Sherbi are going to offer three new options. One comes doused in a sweet and spicy sauce that mixes tiger sauce and Pickapeppa sauce. \u201cIt\u2019ll be called Stan\u2019s Sauce,\u201d McRae said. Other additions are lemon pepper and garlic parm sauces.\u00a0<\/p>\n Sherbi said Stan\u2019s chicken wings are his go-to order. He eats one batch at the bar. And then: \u201cI take a to-go order with me. Every time.\u201d<\/p>\n What\u2019s the bar\u2019s most popular drink?<\/p>\n Busch Light. \u201cIt\u2019s also the most affordable beer,\u201d McRae said.\u00a0<\/p>\n Article continues below this ad<\/p>\n Every first Friday of the month, Busch Lights cost 75 cents.<\/p>\n Will prices go up?<\/p>\n \u201cWe\u2019re not raising prices,\u201d McRae said. \u201cPeople were very concerned we would \u2018private equity\u2019 this. Sometimes, the bar advertises free drinks to a favorite Dallas athlete. Or, it invites customers to an upcoming party.<\/p>\n Article continues below this ad<\/p>\n It\u2019s been the handiwork of a Stan\u2019s regular for nearly a decade, and he\u2019ll keep doing it.<\/p>\n \u201cHe works for two free beers a week,\u201d McRae said.<\/p>\n What\u2019s an e-lounge?<\/p>\n Stan\u2019s has a mezzanine that\u2019s been closed since the elder McRae bought the bar a decade ago. The younger operators plan to reopen the second floor and rent it for company parties, private events and birthdays. Customers who reserve the room can play Madden NFL, NBA 2K, FIFA and Mario Kart.<\/p>\n What does Stan\u2019s mean to you?<\/p>\n \u201cWe\u2019re never going to sell Stan\u2019s,\u201d McRae said.
