Texans just love Texas things. Even as the rest of the world picks up our passion for bean-free chili, honky-tonks, and cowboy boots, we made them famous and we do them best. And when it comes to the Ranch Water, we don\u2019t just have bragging rights in the Lone Star state\u2014we can boast the home of the cocktail right here in Austin at downtown\u2019s Ranch 616 restaurant.<\/p>\n

The Origin<\/p>\n

Founded by late local restaurateur Kevin Williamson in 1998, his original Ranch Water recipe hit the menu in February 1999, based on a concoction Williamson invented on hunting trips with his father, mixing tequila and lime in his water bottle topped off with crisp chilled Topo Chico. Williamson correctly surmised that his own refreshing treat would slake the thirst of other parched Texans and worked up his original recipe with two parts reposado tequila, one part orange liqueur (Ranch 616 uses Sauza Hornitos and Jalisco 1562, respectively), and one part lime, served over ice with a freshly popped frosty Topo Chico on the side to be poured to taste.<\/p>\n

The Authenticity<\/p>\n

For those who have yet to visit Ranch 616, this may sound a little different than other Ranch Waters found on menus across the state, and indeed the U.S. The inclusion of orange liqueur has been dropped by many bartenders in favor of a sharper drink that\u2019s simpler to make with just three ingredients. Jonathan Hall, bar manager at Ranch 616, is unconvinced. \u201cThe drink ceases to be a Ranch Water and becomes a tequila soda,\u201d he says. \u201cYou need to sweetness of the orange liqueur to soften the acid of the lime.\u201d<\/p>\n

Another detail that is non-negotiable to Hall is the use of Topo Chico, which he believes is central to the drink\u2019s Texan identity. \u201cTopo is simply more effervescent than any popular mineral water,\u201d he says. \u201cTexas used to be Mexico, so I think it\u2019s fitting we use a real Mexican mineral water in our Ranch Water.\u201d<\/p>\n

The Legacy<\/p>\n

As with every good Texas myth, different versions circulate, including a story that the libation originated at the famous White Buffalo Bar at Marathon\u2019s Gage Hotel. However, Ranch 616 co-owner Pam Blanton confirms that it was Williamson himself who brought Ranch Water to the Gage when asked to revamp their menu in 2010. Other stories of West Texas cowboys mixing the drink can\u2019t be confirmed or denied, but it was Williamson\u2019s menu item that brought the drink to national attention and launched the many spin-offs and canned versions we\u2019re now familiar with, some of which swap out reposado tequila for blanco or add different flavors. But Hall isn\u2019t impressed: \u201cThere\u2019s no real riff on a Ranch Water in my opinion. It either is or isn\u2019t one, and so far, the only real one I\u2019ve tried is ours!\u201d<\/p>\n

The balance and complexity of Ranch 616\u2019s Ranch Water does, indeed, speak for itself, and after trying it, returning to its stripped-back version is certainly disappointing. Mayor Kirk Watson agrees, noting, \u201cRanch 616 Ranch Water is one of those almost perfect Austin blessings. It mixes creativity, fun, individuality, and it was given birth at one of Austin\u2019s iconic establishments. Plus, it\u2019s one part effervescence, two parts celebration, and a splash of a little weird.\u201d<\/p>\n

Other fans of the cocktail include Texas Longhorn greats Arch Manning and Bijan Robinson. With their 2025 Ranch Water sales at 20,100 drinks sold\u2014averaging to around 1,675 a month\u2014Ranch 616\u2019s reputation for quality and authenticity is keeping its legacy as the home of Ranch Water going strong. For those celebrating National Ranch Water Day on April 11, Ranch 616 will be hosting a party from 3 to 6 p.m. Guests can enjoy $10 Ranch Waters and $2 Frito Pies, chicken sh*t bingo, and live music, with $2 from the sale of each Ranch Water donated to the Health Alliance for Austin Musicians (HAAM)\u2014the perfect way to check out the iconic libation.<\/p>\n
