{"id":245141,"date":"2026-04-11T14:15:11","date_gmt":"2026-04-11T14:15:11","guid":{"rendered":"https:\/\/www.newsbeep.com\/us-tx\/245141\/"},"modified":"2026-04-11T14:15:11","modified_gmt":"2026-04-11T14:15:11","slug":"midwest-chain-the-big-biscuit-eyes-texas-takeover","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/us-tx\/245141\/","title":{"rendered":"Midwest chain The Big Biscuit eyes Texas takeover"},"content":{"rendered":"<p>After 25 years in business, a Missouri-based\u00a0<a href=\"https:\/\/www.chron.com\/best\/map\/best-breakfast-restaurants-houston\/\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">breakfast<\/a> and lunch chain is targeting Texas as its next expansion destination.\u00a0<\/p>\n<p>The team behind <a href=\"https:\/\/bigbiscuit.com\/\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">The Big Biscuit<\/a>, which has 30 locations across the Midwest and South, has its sights set on development opportunities in the <a href=\"https:\/\/www.chron.com\/life\/travel\/article\/houston-dallas-texas-road-trip-17727796.php\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">Dallas\u2013Fort Worth<\/a> and Houston regions, according to a recent call for franchisees. But a few other additional markets across the state are under evaluation, too.<\/p>\n<p>&#8220;As we look to expand into Houston, Texas is a natural step for The Big Biscuit,&#8221; president and CEO Chad Offerdahl said in an announcement. &#8220;Communities across Houston value the same thing we do: connection, hospitality, and a breakfast restaurant to bring people together. We&#8217;re looking for experienced restaurant operators who share our passion for hospitality and community initiatives, who are committed to quality food and operational excellence.&#8221;<\/p>\n<p>Aside from big (freshly baked buttermilk) biscuits, The Big Biscuit serves a variety of comfort brunch bites like plate-sized pancakes, loaded chicken and waffles, stacked sandwiches, burgers, specialty grits and something called &#8220;scram-bowls.&#8221; These are bowls filled with scrambled eggs, breakfast potatoes, meats and veggies.<\/p>\n<p>Dan Gerson founded The Big Biscuit, opening its original location in 2000 in Independence, Mo. A decade later, after a visit to that very same eatery, Offerdahl and his father bought the business from Gerson. Since, the concept has launched locations in Arkansas, Kansas, Missouri and Oklahoma.<\/p>\n<p>The Big Biscuit isn&#8217;t the only biscuit brand heating up Texas&#8217; brunch scene. North Carolina&#8217;s <a href=\"https:\/\/www.chron.com\/food\/article\/bojangles-austin-manor-texas-chicken-21305479.php\" data-link=\"native\" rel=\"noopener nofollow\" target=\"_blank\" class=\"\">Bojangles<\/a> recently opened its first Austin-area location in Manor, with more opening near Dallas-Fort Worth in the coming months.
