Texas just happened to check all of their boxes. “Texas felt like the right kind of energy for us, fast-growing, food-driven, and open to new concepts,” Bartlett said.

The “not famous but known” chain started out as a backyard pickup window in Wesport, Conn. in 2020. Since then, PopUp Bagels has brought its crispy crusted, soft-crumb center bagels with rotating schmears to more than 30 locations across the U.S.

Kolaches (or klobasniky) and breakfast tacos typically dominate Texas’ breakfast menus, but PopUp Bagels franchisee Don Meji told Chron there has been demand for their product.

“The bagel category is not a new category. Like all of its other stores, there are no sandwiches—just bagels in bundles of 3, 6, 12 or 30 served fresh from the oven ready to “grip, rip and dip,” a quality that the brand’s team hopes to hold even as they expand.

“Growth only works for us if the product stays true to what built the brand. We don’t rely on a traditional supply chain,” Bartlett said. “We bake throughout the day in each shop, keep the menu tight, and stay hands-on so quality never slips as we scale.”

One of the biggest brands in the bagel game is getting ready to roll into Texas.
