SAN ANTONIO \u2013 This year, when you\u2019re served your oysters at Fiesta<\/a> Oyster Bake, they\u2019ll come in a cardboard box instead of a plastic bucket. <\/p>\n

This is one way the Fiesta tradition is becoming more sustainable in 2026. <\/p>\n

Oyster Bake is one of San Antonio\u2019s oldest and largest Fiesta traditions. It\u2019s happening this year on Friday and Saturday at St. Mary\u2019s University.<\/p>\n

\u201cIt\u2019s about the family, it\u2019s the music and giving back to the community,\u201d Ernie Alcala said. <\/p>\n

Oyster Bake is an annual music festival where all the funds raised go directly to the university, and it\u2019s exactly what the name sounds like. <\/p>\n

This year, organizers are expecting to serve more than 100,000 oysters across the two days. <\/p>\n

After you eat your oysters this year, don\u2019t throw away the shells! <\/p>\n

The South Texas Coastal Initiative teams up with Sink Your Shucks out of the Harte Institute to collect used shells and repurpose them for oyster reef rehabilitation. <\/p>\n

We followed their story<\/a> last year:<\/p>\n

\u201cAfter this weekend, these shells go to the Texas coast,\u201d Stephanie Tierce, the program coordinator for Sink Your Shucks, said. <\/p>\n
