{"id":264911,"date":"2026-04-24T21:17:08","date_gmt":"2026-04-24T21:17:08","guid":{"rendered":"https:\/\/www.newsbeep.com\/us-tx\/264911\/"},"modified":"2026-04-24T21:17:08","modified_gmt":"2026-04-24T21:17:08","slug":"san-antonio-blasts-bon-appetit-after-conchas-snub","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/us-tx\/264911\/","title":{"rendered":"San Antonio blasts Bon App\u00e9tit after conchas snub"},"content":{"rendered":"<p>Because San Antonio is so deeply rooted in Mexican culture, it&#8217;s no secret that\u00a0pan dulce\u00a0is made with a little extra love and care here.\u00a0<\/p>\n<p>That&#8217;s likely why it stung so many San Antonians when national tastemaking magazine Bon App\u00e9tit snubbed the Alamo City in its &#8220;Where to Find Conchas Around the Country&#8221; <a href=\"https:\/\/www.instagram.com\/p\/DXfFqSukk2M\/?utm_source=ig_web_copy_link&amp;igsh=NTc4MTIwNjQ2YQ==\" data-link=\"native\" class=\"\" rel=\"nofollow noopener\" target=\"_blank\">list<\/a>, which <a href=\"https:\/\/www.bonappetit.com\/story\/conchas-are-the-new-croissant?srsltid=AfmBOoqNXHBt8xERTr01esLRm-zDv-HTbSnPaz7khhIoQ4qzx7t5E3NF\" data-link=\"native\" class=\"\" rel=\"nofollow noopener\" target=\"_blank\">dubbed<\/a> the iconic Mexican pastry as\u00a0the &#8220;new croissant.&#8221;<\/p>\n<p>&#8220;A longtime staple of Mexican panader\u00edas, the concha is now showing up across the U.S. bakery scene in creative, new iterations,&#8221; the magazine&#8217;s Thursday Instagram post read. &#8220;From Austin to Vermont, bakers and pastry chefs are experimenting with brioche dough or sourdough starters, heirloom grains, and Mexican cacao, cinnamon, and vanilla.&#8221;\u00a0<\/p>\n<p>The post included eight bakery mentions in total, listing only two shops in Texas \u2014 the state that shares the longest border with Mexico \u2014 and none from San Antonio. Of course, people in the comments did not seem pleased.\u00a0<\/p>\n<p>&#8220;San Antonio would like a word,&#8221; @s_k_ultra wrote. &#8220;Choose any bakery in San Antonio for this list,&#8221; added @johnmarrvelous. &#8220;Conchas aren\u2019t just food \u2014 it\u2019s a lifestyle in San Antonio &amp; you will see people wearing conchas as apparel in South Texas.&#8221;<\/p>\n<p>&#8220;Glad to see more coverage on it. But notably missing is @lapanaderia\u2019s conchas, a chain in San Antonio, which really helped spark the movement and made an effort to use high quality premium ingredients at a price people still can afford,&#8221; wrote @mariselmsalazar.\u00a0La Panader\u00eda even weighed in, adding a simple red heart emoji to a commenter boosting their reputation for soft, pillowy conchas.\u00a0<\/p>\n<p>While Bon App\u00e9tit may not have mentioned any San Antonio bake shops, locals know there are plenty of places that sell quality conchas.
