Lupe Tortilla will be returning delicious Tex-Mex fare to the building, following On the Border\u2019s closure earlier this year.<\/p>\n<p>\u00a0<\/p>\n<p>The chain-exclusive to Texas-will be renovating the 5000 State Highway 121 restaurant space. While the previous tenant and Lupe Tortilla have a great deal in common, the work required will still be relatively extensive-paperwork filed with the Texas Department of Licensing and Regulation describes it as: \u201cComplete interior remodel of existing building. Exterior finish remodel to meet Lupe Tortilla design standards.\u201d<\/p>\n<p>\u00a0<\/p>\n<p>Locals will be able to begin charting the restaurant\u2019s progress before the year is out; work is set to begin on the 8,233 square foot space by December 31 of this year. The project is estimated to wrap by May 31 of 2026, a positive indicator for a late spring or early summer opening.<\/p>\n<p>\u00a0<\/p>\n<p>Plano foodies can look forward to choosing from a rather expansive menu of Tex-Mex favorites. Lupe Tortilla itself offers the best description of what\u2019s in store, saying: \u201cSince 1983, we have been serving the best of Texas\u2019-Mex using only the freshest, highest-quality ingredient.
