Taco spots are a dime a dozen in Central Texas, but finding the cream of the crop is exactly what James Beard Award-winning writer,\u00a0Jos\u00e9 R. Ralat, does for a living. Two Austin taco joints landed on\u00a0Ralat’s new Texas Monthly list of “The 25 Best New(ish) Texas Taquerias in 2026<\/a>.”<\/p>\n

Austin’s Comadre Panader\u00eda<\/a> and Paprika ATX were named among the best taco spots in the Central Texas\u00a0region alongside four San Antonio taco joints: Aguazul, Anacacho Coffee & Cantina, Tacos on the Street and Waca. As for what to order at Comadre and Paprika ATX when in Austin, Ralat had a few favorites.<\/p>\n

What to order at Comadre\u00a0Panader\u00eda in Austin<\/p>\n

Founded by San Antonio native\u00a0Mariela Camacho, Comadre is a lauded East Austin bakery best known for its unique pan\u00a0dulce, but Ralat also recommends the bakery’s newly added breakfast tacos.<\/p>\n

“The bean and cheese taco is a true power combo in which velvety pintos are caught in a net of salty cheddar,”\u00a0Ralat wrote in the article. “The sublime\u00a0nopales, egg, and cheese taco-an homage to Camacho’s mother-features chopped and seared cactus pads seared in a chile de \u00e1rbol\u2013spiked, ranchera-style salsa.”<\/p>\n

He also praised Comadre’s “Taco de Pi\u00f1a,” which he described as a “sweet, baked delight of pineapple jam in puff pastry.”<\/p>\n

What to order at Paprika ATX<\/p>\n

Founded as a food truck in 2019 by husband-and-wife duo Margarito and Hayden P\u00e9rez, Paprika\u00a0ATX<\/a> is now a restaurant best known for its pork\u00a0trompo tacos, only available on Saturdays. In addition to Paprika’s signature trompo tacos, Ralat also enjoyed its carnitas and suadero tacos.<\/p>\n

“The carnitas are cooked in the traditional cauldrons called cazos and have a touch of sweetness,” Ralat wrote. “The suadero-which is roughly chopped and simmered in beef tallow-tastes best in a special suadero taco with spicy salsa macha. Perhaps the best day to visit is Saturday, when pork flies off the trompo and into tacos al pastor for the line of salivating customers.”<\/p>\n

In addition to his top 25 list,\u00a0Ralat also gave an honorable mention to\u00a0Sabor Tipico Guanajuato in Austin for their pineapple and cucumber-lime\u00a0aguas frescas, which he says are blended fresh per order.<\/p>\n
