It took five years, but the most beautiful rooftop<\/a> in Fort Worth is fully open.<\/p>\n

The 17th-floor restaurant on top of the Sinclair, Autograph Collection<\/a> hotel is now open as Nikuya Rooftop, a sushi restaurant from the same local restaurateurs behind the first-rate Wicked Butcher<\/a> steakhouse.<\/p>\n

\u201cWe always wanted to do something up there,\u201d executive Nafees Alam<\/a> said. But the original plan for an open-air rooftop bar proved too open-air in Texas weather.<\/p>\n

Nikuya added the perfect touch: a 16-seat, weather-controlled counter serving sushi, nigiri, sashimi and crudo with a variety of craft cocktails and sake.<\/p>\n

It\u2019s what downtown has needed: a spectacular sushi restaurant for dinner and cocktails.<\/p>\n

Nikuya, formerly RTB (Roof Top Bar), added the glassed-in sushi bar because \u201cthe weather was always crazy \u2014 it was either too hot, too cold or too windy,\u201d Alam said.<\/p>\n

\u201cWe want a restaurant that can be open the whole time. No matter the weather, you can dine year-round.\u201d<\/p>\n

The surrounding rooftop seating will be open when weather permits, he said.<\/p>\n

RTB has been closed nearly a year for the Nikuya makeover.<\/p>\n

\u201cA sushi restaurant seemed to be something downtown needed,\u201d Alam said.<\/p>\n

The chefs from Wicked Butcher came up with a menu with a variety of items featuring a \u201cNikuya Cut\u201d wagyu beef roll with avocado and fried leek, or a brave \u201cTrinity River\u201d tuna roll with shiso, cucumber, soy, jalape\u00f1o, avocado and tomato.<\/p>\n

Appetizers include oysters, salmon or scallop crudo, and tuna tartare with Fresno chiles.<\/p>\n

Alam said his favorite rooftop view is toward Sundance Square or northeast toward the Trinity River. But there\u2019s an open view on three of the four sides.<\/p>\n
