Rollin Joe\u2019s is slated to open in late summer or early fall 2026. It’s located across the street from Southern Methodist University.<\/p>\n
The shop was created to be a \u201cvibrant gathering place for students, neighbors and visitors alike,\u201d according to a news release. The plan is to sell espresso,\u00a0matcha, smoothies, energy drinks and quick bites. It will turn into a lounge with DJs at night.<\/p>\n
It will also have a walk-up window for drinks.<\/p>\n
Rollin Joe\u2019s is named for the fictional Joe, a character described in a statement as “a laid-back, music-loving personality.\u201d The idea for the coffee shop comes from Jones\u2019 nephew Jerry\u00a0Mooty, an SMU alum and the CEO and Principal of Christie’s International Real Estate @properties Lone Star in Dallas. Joining Mooty in the project is Kirk Thompson, a Panera Bread and Jimmy John\u2019s franchisee.\u00a0<\/p>\n

That address\u00a0dates back decades as a sandwich shop. Since the 1970s, New York Sub was a casual, family-friendly spot. The restaurant closed in February 2026 after the building was sold. \u201cI just can’t afford it,\u201d New York Sub co-owner Andrew Kelley said after the building changed hands.\u00a0<\/p>\n
Mooty said in a statement that the former restaurant \u201cholds a special place in the hearts of generations of SMU students and Park Cities residents.\u201d<\/p>\n
The new concept will be decidedly different, more of a \u201cmodern cafe,\u201d according to the news release, with a vinyl listening lounge.<\/p>\n
