{"id":402276,"date":"2026-08-10T03:46:10","date_gmt":"2026-08-10T03:46:10","guid":{"rendered":"https:\/\/www.newsbeep.com\/us-tx\/402276\/"},"modified":"2026-08-10T03:46:10","modified_gmt":"2026-08-10T03:46:10","slug":"penn-dining-adds-mediterranean-station-at-houston-market-expands-plant-based-options","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/us-tx\/402276\/","title":{"rendered":"Penn Dining adds Mediterranean station at Houston Market, expands plant-based options"},"content":{"rendered":"<p>Penn Dining will expand its menu offerings for the academic year, including with the addition of a Mediterranean-inspired station at Houston Market.<\/p>\n<p>La Plancha \u2014\u00a0a burrito station that was <a href=\"https:\/\/www.thedp.com\/article\/2021\/08\/penn-dining-meal-swipes-fall-2021-sushi\" target=\"_blank\" rel=\"nofollow noopener\">introduced<\/a> to the dining hall in 2021 \u2014 will be replaced by a new station called Taverna. Executive Director Dining Strategy and Innovation Shazad Khan told The Daily Pennsylvanian that Penn Dining will also extend international menus and introduce plant-based offerings following student input and an annual review.<\/p>\n<p>\u201cWe see lots of quick, authentic Mediterranean-based food that\u2019s really popular right now and on trend in the Philadelphia area,\u201d Khan said. \u201cWe want to make sure we can represent that.\u201d<\/p>\n<p>Khan added that Taverna will continue serving wraps, which La Plancha offered.<\/p>\n<p>\u201cThat\u2019s a big shift for us in Houston, but we think it\u2019s going to be one that really will resonate well to students,\u201d he said.<\/p>\n<p class=\"font-serif\">Get the DP delivered straight to your inbox.<\/p>\n<p>  <a href=\"https:\/\/thedp.us2.list-manage.com\/subscribe?u=a96885e3aa3f8131c872ee329&amp;id=370b4800ba\" class=\"newsletter-btn font-sans no-underline\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"> Sign Up<\/a><\/p>\n<p>The dining location introduced a <a href=\"https:\/\/www.thedp.com\/article\/2026\/02\/penn-dining-halls-new-healthy-beverage-food-options\" target=\"_blank\" rel=\"nofollow noopener\">wider selection<\/a> of healthy beverage options in fall 2025, including options such as orange juice, apple juice, and boxed milk.<\/p>\n<p>Houston Market will also introduce Spruce Street Garden, a fully plant-based station, according to Khan. The concept will build upon Global Garden at 1920 Commons, which was introduced in the 2025-26 academic year and serves vegetarian meals that adhere to the Jain diet.<\/p>\n<p>\u201cIt\u2019s going to be a fully plant-based area, so that there won\u2019t be any meat introduced in that section,\u201d Khan told the DP.<\/p>\n<p>This year, Khan said, Global Garden will expand its international focus to include Vietnamese, Korean and Mediterranean-themed weeks.<\/p>\n<p>\u201cWe\u2019re working to make sure that can work for both vegan folks and Jain folks, and folks who are vegetarian can also enjoy it,\u201d Khan said.<\/p>\n<p>Commons will also introduce a \u201cfermentation bar,\u201d which will include kimchi and various types of pickles. The station will feature the \u201cthe benefits of of pickling and fermentation,\u201d including a \u201clot of really great health benefits for your gut,\u201d according to Khan.<\/p>\n<p>At Lauder College House, Penn Dining will introduce international cuisines for a week at a time.<\/p>\n<p>\u201cA lot of the cuisines really can be explored over a week\u2019s worth of time, where folks can really get in, and students can see different dishes through a full spectrum to really kind of understand the flavor palettes and \u00a0some of the traditions,\u201d Khan said.<\/p>\n<p>He added that the program will connect will PennCooks, a platform that pairs chefs with student groups to highlight cuisines and cultures. Previously, Khan said, PennCooks led to Penn Dining\u2019s Latin History Month celebration, which included performance music and decorations, and a speciality cuisine.<\/p>\n<p>At Hill House, Penn Dining is introducing \u201cFried Chicken Fridays.\u201d The program will feature a different versions of fried chicken each week, including Indonesian fried chicken with sambal and honey.<\/p>\n<p>Hill House will also work with local vendors to incorporate additional vegetables and plant-forward options into its menu.<\/p>\n<p>According to Steven Green, Penn Dining executive director of operations and infrastructure, approximately 20% of the department\u2019s produce purchases come from farms or artisans located within 150 miles of Penn\u2019s campus.<\/p>\n<p>At Falk Dining Commons in Steinhardt Hall, which serves kosher fare, Penn Dining will establish new Shabbat dining menus to \u201cenhance the experience, make it more fun, but also more intimate at the same time to make sure that we&#8217;re meeting tradition,\u201d according to Khan.<\/p>\n<p>The location will also include additional dairy-night options and more Israeli cuisine.<\/p>\n<p>Quaker Kitchen will introduce \u201cviral food moments to really stay on trend,\u201d Khan said.\u00a0<\/p>\n<p>\u201cWith social media, TikTok, Instagram, there\u2019s so many food trends that we\u2019re exploring that come out really quick, like dot cakes and you know, you name it,\u201d Khan added. \u201cYou might see something on TikTok today, and you might see it in Quaker Kitchen next week.\u201d<\/p>\n<p>Quaker Kitchen will also include additional beverage options, such as dirty sodas and natural antioxidant waters.<\/p>\n<p>Across the changes, Khan said that Penn Dining\u2019s goal is to balance culinary creativity with the needs and preferences of students.<\/p>\n<p>\u201cWe know what we\u2019re here for is to take care of you all,\u201d Khan said. \u201cWhat we\u2019re interested in is what\u2019s working and what\u2019s not, what you\u2019d like to see coming up, and what you\u2019re really liking.\u201d\u00a0<\/p>\n","protected":false},"excerpt":{"rendered":"Penn Dining will expand its menu offerings for the academic year, including with the addition of a Mediterranean-inspired&hellip;\n","protected":false},"author":2,"featured_media":402277,"comment_status":"","ping_status":"","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[7],"tags":[56,58,57],"class_list":["post-402276","post","type-post","status-publish","format-standard","has-post-thumbnail","category-houston","tag-houston","tag-houston-headlines","tag-houston-news"],"_links":{"self":[{"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/posts\/402276","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/comments?post=402276"}],"version-history":[{"count":0,"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/posts\/402276\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/media\/402277"}],"wp:attachment":[{"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/media?parent=402276"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/categories?post=402276"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/www.newsbeep.com\/us-tx\/wp-json\/wp\/v2\/tags?post=402276"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
